Yummy (and Healthy!) Granola Recipe

Peanut Butter Granola
 
3 Tbsp. coconut oil
1 c. honey (We used Pure Alabama Raw Honey)
1/3 c. peanut butter (We used Smooth Operator Organic Peanut Butter)
1/2 tsp. vanilla extract
1/4 tsp. salt
3 c. rolled oats
 
Melt coconut oil and peanut butter in a saucepan.  Add honey, salt and vanilla extract.  Mix well until blended.  Stir in oats until coated.  Bake on a cookie sheet for 10 to 15 minutes at 375°.  Stir occasionally to avoid burning.  Cool before storing.  Enjoy!  It's good and it's good for you!
